Drive through Sweden in summer and you’ll encounter swathes of warm yellow next to fields of green. These are canola crops, bright, yellow-ﬂowering plants belonging to the Brassicaceae family. Nutritionally, canola oil is very low in saturated fats, making it a healthy option.
